Using the Stockpile, Day 25: Leftovers
Today was a day of no cooking and no shopping. I did eat quite a bit of the vegetables that I purchased from Sam's Club yesterday. I like the crunch! I am going to have a leftover black bean burger for dinner with some veggies, and gelatin for dessert. My husband will have the pasta dish that I made yesterday.

Using the Stockpile, Day 24: Veggie Run, Baked Noodles, Bye-Bye Supplies!
As I posted yesterday, my husband had been out of Jif for a few days now and will not touch the organic peanut butters that I have on hand. So, this required a trip to the store. I usually buy his Jif at Sam's Club. While there, I decided to kill my craving for fresh veggies as well. There's only so many frozen peas and green beans I can handle. Next week, I plan on restocking the fridge with fresh stuff from Sam's, along with ground beef or turkey (I can't believe I have neither in my freezer!). I would've made chili this month, but I can't see chopping up some Omaha Steaks for a vat of chili, it seems wrong. The fridge freezer is looking awesome, and the chest freezer is better, but still stocked with tomatoes and meat. :)
Remember the tomatoes I cooked down the other day? I took the rest of a jar of Ragu from the fridge, added some cooked noodles and the rest of a bag of Italian cheese, some asiago cheese, some Gaspar's linguica and baked that up for dinner.

Using the Stockpile, Day 23: The Man is Out of Peanut Butter!
I didn't cook anything today, since I cooked so much yesterday. Instead, I blogged, cleaned up the living room and kitchen, caught up on "Pretty Little Liars" online and got a workout in. Then, I had to go to work! I did make some Jello though. :) Tomorrow I've got to go to Sam's Club and get my husband his Jif. He's been out for a couple of days and won't eat the natural stuff. Oh well. :) Still under $100 for the month, right??

Using the Stockpile, Day 22: Black Bean Burgers
I had to get some milk today, and so while I was out I went to Fareway. Usually, I have pretty good luck in the 'clearance bin' for fresh veggies, but today not so much. I ended up buying two bagged salads for 88 cents a piece - impulse - and I went into Fareway with a coupon for Coffee-Mate, as I am tired of drinking my morning coffee black or with milk. I usually use half and half, and probably should've stuck with that to keep the bill down. Oh well. :) I also bought a bag of 99 cent bananas (good for smoothies, and we like them ripe anyways) and some apples. I saved 5 cents by bringing my own bag. Total cost at Fareway was $6.44. I stopped at Kum & Go for 2/$6 milk too. = $12.44 for groceries today. Considering I generally spend $15-25 weekly on fresh produce, I think I did okay! Nine more shopping days left and I think I will be well under the original goal of $100 for the month. Next time I do this grocery limiting, I think I'll do it mid summer when I have more homegrown produce available. :)
Since it's my day off, I decided to whip up some food. I made black bean burgers (1 can black beans, rinsed, 1/4 cup bread crumbs, 1 egg, chopped onion, garlic, salsa, and 1/4 cup shredded cheese cooked in some olive oil), a package of bacon, and I had 4 roma tomatoes that I got last time at the store and never used, so I cooked them up into a semi-sauce, which I will put into a baked noodle casserole with some leftover Ragu from the calzones the other night.

I also took the rest of the Johnsonville Cheddar Bratwurst Patties out of the freezer (4) and cooked them on the electric grill for my husband's lunch for the rest of the week.
For dessert tonight, we are having Jello pudding!

Using the Stockpile, Day 21: Runzas, Fiber One Muffins, Lazy Cat & Dog
My mom came by Sunday night and "stole" my oatmeal, which I make bread with. It had about two cups left in it, so it wasn't that bad. However, she gave us a big container of "runza casserole", made with ground turkey, crescent rolls, cheese and a bag of coleslaw. I'm not sure what else is in there. :) Anyways, that was our lunch and dinner today along with a can of green beans.
I decided to make some Fiber One banana nut muffins that I had in the cupboard. I switched the oil for applesauce to save some fat and they came out delicious!
I got up this morning to make my coffee and let the dog out of her bedroom and she ended up in my spot on the couch. So, I put a pillow on her so I had a place to sit and came back to the cat on top of her. Aww. :) It's too cold for outdoor time today!
