Using the Stockpile, Day 19: Calzones


You guys.  As soon as this month is over, I am buying the most calorie-dense, sugary coffee creamer the world has ever seen.  Ok, not really, but some type of coffee creamer.  Today, I am drinking it plain.  It isn't terrible, but it isn't my cup of tea... err, coffee.  :)  On that note, we've got half a gallon of milk left.  If we can make it until Tuesday, I can buy 2 more gallons for $6.  I don't think those will last us for the rest of the month, but it's worth a shot.  I didn't go to the store yesterday (Friday) as I usually do weekly with my father, so that saved some money.

At dinner, I was going to make fish, but decided instead on calzones.  I found some shredded cheese in the freezer, used some Ragu from the cupboard along with chopped olives, onions and tomatoes and some deli pepperoni from the cupboard.  I used this recipe for the dough. 

I was rushing to put these bad boys together and I didn't feel like doing the braiding, so they baked up, puffed out and steamed nicely.  Pretty tasty!



My husband is down to the nitty gritty of his peanut butter.  He's a total Jif guy.  He doesn't care for the all natural kind that I have in the cupboard, but he might have to have it if he wants peanut butter and crackers for his afternoon snack.

BA - Thrifting @ Crittenton's Resource Center, Noah's Hope Animal Rescue, Salvation Army, & Mission of the Messiah


I spent the day with my bestie today.  We decided to hit a few thrift stores to see what we could find.
First we went to Crittenton's Resource Center.  As I posted on our facebook page today was "free" day from 9am - 12pm. I got a pair of Carebear PJ Pants, a pair of Justice pants for DD, a jacket with horses on it for my niece, and a old navy long sleeve shirt for DS.
We then went to Noah's Hope Animal Rescue Thrift Store.   I got nothing there, but my bestie got a bunch of Blue Jeans for her son for only $1.00 a pair, thats a Steal of a Price!  She also got a bag full of stuffed animals for .25-.50cents each for her doggie to chew up.
Then we went to SSC (so I could stop at the doc to get prescriptions) while we were over there we stopped at the Salvation Army Store (by walmart in SSC).  Talk about OVER PRICED!  $6.95 for a pair of jeans that is crazy!  So of course I bought nothing again. (:
We made a stop at Applebees for Lunch, then hit the mall for our FREE Bath & Body Works Lotion I also posted to the blog!
Lastly we went to Mission of the Messiah I got 2 Disney Princess Valentines & 1 Spiderman Valentines for only .75cents each! (retail value $3.99).  I also got 4 Guinness Book of World Records for only .75cents each as well (retail $27.95 each!) and a Replies Believe It or Not book for only .75cents!
Total oop $6.42.  My kids LOVE the world records books!
My Bestie found some ds games at only $8.00 & $5.00 as well as some make-up for her daughter.
I might have did a lot of "driving" today, but I got to spend the day with my bestie with out our kids (they were in school) and found some great items while doing it!

I took out some freezer steaks and paired with sauteed mushrooms and onions, and we finished off a bottle of A1!  No pictures, we ate too fast.  Haha.

Using the Stockpile, Day 17: Bacon; No Shopping; Leftovers


I cooked up a package of bacon today, before getting a walk in with my dog.  It's still slick out there on the sidewalks, so we had to go pretty slow.

For lunch, I opened up the box of Johnsonville Cheddar Bratwurst Patties that were in the fridge freezer.  Considering my husband is used to having a sandwich every day for lunch and hasn't for like 10 days now, he's doing okay and hasn't complained.  He finished off a box of Cheerios today and he's down to 1 box of plain Cheerios and 2 1/2 boxes of Special K, I believe.  For dinner, we had leftover curry from last night.  For my afternoon snack, I had a latte, homemade.

I'm feeling the urge to hit Fareway hard this week, but I know I want to stay under my goal and in reality, I don't really need much.  If I do go with my father, I might split a bag of oranges. :)

Using the Stockpile, Day 16: Patak's Curry W/Chick Peas & Pork



I like to post the recipes I use so that I can give you an idea of what we're using up and so that you know we aren't depriving ourselves of some good eating by not shopping hardcore all week.  While I do miss salads, eating frozen vegetables and clearing out the stockpile isn't bothering me one bit.  Check out yesterday's post for the lentil loaf - it was fabulous and VERY filling for ~300 calories per portion (4 hearty portions per bread pan) the way I made it.  I hope to keep the budget low for the rest of the month.  We are spending about $6 a week on milk, so we may go over just by that.  I have to steer clear of a lot of sales this week, or spend under $5.   I still haven't hit the frozen fish yet, and I may have to start soon.  Also, we've got a lot of steak I've barely touched.  And bacon.  Gotta love bacon.  This is especially fun since I'm trying to stay at about 1600 calories a day right now.

I wanted to try out some Patak's curry paste that I had in the cupboard and had yet to test.  So, I took a can of low sodium chick peas, drained them, and took a ~1 lb pork roast (from a large roast that I had cut and froze), plus some paste and some frozen peas and sauteed until cooked.  I put this over some basmati rice, sided with some Patak's mango chutney.  I used the mild curry paste and my husband still hit a couple of "hot spots".  I don't think he'll be able to handle the hot paste! :)

Using the Stockpile, Day 15: Lentil Vegetarian Loaf




I worked extra this morning, and will probably work extra for the rest of the week.  A gal in my profession needed some help as she has the flu, so I agreed.  So, I have a 12 hour shift today.  I'm already pretty wiped out!

Today, I made a vegetarian "meatloaf" out of lentils.  My mother found this recipe a few years back and put her own variety of special spices in it and it was delicious!  I probably have enough lentils to make another loaf before the end of the month.


Sometime this week, I need to make a recipe with dry chick peas.

Using the Stockpile, Day 14: Hummus & Cleaning


Today, I decided to wake up and start reorganizing the cupboard a bit.  I took stuff off of the top shelf (cereal area) and put it on the second shelf (pasta area), and I took all of the boxes of tea out of the plastic container they were in on the bottom shelf and stacked them.  After all of that, I went and reorganized my "random" area of the kitchen and made a place for my crock pot and mixer so that they wouldn't have to be stuck in one of the underneath cabinets.  My kitchen is pretty small, so reorganizing is a constant process when I end up with new machinery.

Today was a day for laundry, cleaning and a little catching up on some television shows (I missed Nashville last week).  Of course, it's Monday, so I have to work too.

I did make some hummus!  I took 1 can of chick peas, rinsed and 1/4 cup of Joyva Tahini (I got this at Vitacost), and some salt, pepper, hot sauce, garlic and lemon juice and threw it all in the food processor.  It's great with veggies, as a dip or on sandwiches.

My bread maker decided it wanted to work today too, so I made a loaf of honey oat beer bread with flax, and put it on the dark setting.


Leftovers and tuna sandwiches today.  Tomorrow I cook again.

Using the Stockpile: Days 12/13, Pasta Bake


Saturday, January 12th was a very busy day.  I had to work, then had a holiday party with my husband's work (catered, yum!) and then had a birthday party for a friend, so no cooking took place.  Therefore, here's a combined summary of the weekend of January 12-13th. :)

As to not increase the food budget this month, I've been sticking to milk for my morning coffee.  It's not as creamy as half and half, but I will manage!  The freezer in the fridge is already looking better.  We've been working on frozen fruits and vegetables a lot, but I still like fresh stuff and yogurt (which I stocked up on the first week on clearance).  I'm trying to limit those purchases still.  I'm still making our own bread, even though the bread maker keeps acting up.  The last batch mixed, then the motor seized, so I let it rise and baked it normally.  

Sunday, I took some frozen pasta sauce that I had made this summer from fresh garden tomatoes and herbs, a box of rotini, some mozzarella, fresh Parmesan and a 1 lb package of Farmland pork sausage and baked it.  Jon LOVED it.  I sometimes make things thinking "this will be interesting" and then when they turn out good, he goes crazy!
