Black Bean and Corn Salad with Cilantro - Yum!

I had some cilantro left over from another meal, and wanted to make my favorite:  Black bean and corn salad.  My grandmother made this for us as kids one time and I remember eating it right out of the bowl!

1 can black beans, rinsed (or use 1.5-2 cups cooked black beans from scratch)
1 can whole kernel corn (or 1.5-2 cups of frozen corn)
1/4 cup chopped purple onion
1-2 tbs of chopped cilantro
1-2 large tomatoes or equivalent (I used ~20 cherry tomatoes as they needed to be used up)

Mix all together, and let it sit in the fridge for at least an hour to combine flavors.  Enjoy!

*I've added hot sauce, cumin, garlic, lime juice and other things before, but I like it "plain" ;) Pin It
