Using the Stockpile, Day 8: Avocado, Quinoa, Baked Chicken with Biscuits

Today, I made two things I've never made before!  For lunch, I took half an avocado (last day for $2/1 at Fareway!) and put some balsamic vinegar in the center.  I reheated some quinoa with some spinach-artichoke cheese leftover from Christmas and ate that all together.  The balsamic vinegar I used was "Seggiano Chili Balsamic Condiment - 250ml" that I bought from OpenSky (sign up here and get $20 to shop with).

For dinner, I reused leftover chicken and vegetables and put a biscuit top on it!  Here's a recipe I took the biscuit recipe from.  I didn't follow the other part of the recipe as I used leftovers, but I made some gravy and added peas to my chicken, potatoes, carrots and celery.  It was my first attempt like this, and while it doesn't look good, the taste was pretty good!
