Soynut Butter Chocolate Chip Cookies




I've had some yummy soynut butter in the cupboard for a while and decided to do something different with it, so I made some cookies!  They came out very rich, and I look forward to having one in the morning with the super dark coffee my husband gave me this afternoon. :)

1 cup I.M. Healthy Soynut Butter, Creamy Honey Flavor (can be purchased through Vitacost)
1 stick butter, melted
1 egg
1 3/4 cup flour
1/3 cup brown sugar
1/3 cup white sugar
3/4 tsp baking soda
1/2 tsp baking powder
1/3 tsp salt
1 cup 60% Cacao Bittersweet Chocolate Baking Chips

Mix dry ingredients, then add in everything else but the chocolate.  Once mixed, add in the chocolate and make into balls.  Flatten with a fork.  Bake for 11 minutes at 375.  Makes 2 dozen good-sized cookies.
