Uncle Sam's "Crispies" - Full of Fiber and Crunch!

While my best friend was in town, we made some Uncle Sam's "Crispies".  I had an open bag with about 2 cups, plus we purchased a 5 serving box at the store.  Plus, I used 10 of those HUGE marshmallows, 3 tbs of butter and added some coconut.  With 10 gm of fiber per serving, Uncle Sam's Crispies are going to be a healthier more satisfying snack that will fill you up better.  Plus, they're *almost* healthy, right? ;)

I used:
1 small box + 2 cups of Uncle Sam's Cereal - 10 oz (or buy the big box if your store has it)
10 large marshmallows or 30-40 regular sized
3 tbs of butter.
3/4 cup shredded coconut

Melt butter and marshmallows on low heat, add in the Uncle Sam's and coconut.  Mix together well and spread out and let cool.  Store in air tight container so they don't dry out too quickly!  Enjoy!
