Scalloped ham and potatoes, an easy weeknight meal =D



I made this dish of scalloped ham and potatoes with leftover ham that I bought last month (frozen, then thawed)... It's VERY tasty and too easy to make!  Next time I buy ham, I'll just slice it up with potatoes and throw it in the freezer so I can put this dish together.

Ham - about 2-3 cups worth, sliced thin
4 regular potatoes, sliced thin (any kind will work!)... 
2 onions, sliced thin
butter
1.5 cups of milk
1 cup shredded cheese (I used mild cheddar, as that's what I had thawed).

Make a white sauce with 2 tbs of butter and 2 tbs of flour, whisk and then add in 1.5 cups of milk. and let it get thick, then take off the heat.  Sautee the onion with butter.  Then, in a buttered baking dish, put some white sauce, then layer the potatoes/ham/onions, more white sauce, and top with 1 cup of cheese.  I added pepper, but not salt as I think the ham and cheese have enough salt in them for this dish. Bake for 45 minutes at 375, or until cheese is browning and potatoes are.   Pin It
