*Garden veggies with quinoa and beans*

I've had some Swiss chard, zucchini and cilantro for a couple of weeks now and decided to make a fun little "creation" dish tonight.  I've seen a few recipes for specific "quinoa salads" and others, but I wanted to do with what I had.

1 handful fresh Swiss chard (about 8-10 stalks), chopped up bite sized
1 clove garlic, minced
4-5 stems of cilantro, chopped
1 zucchini, sliced and then quartered
1 large or equivalent tomatoes, chopped bite sized
1 can (drained) or 1.5 cups prepared black beans
1/2 cup onion, sliced and/or diced, depending on your preference
1 cup quinoa (cook as per directions)
1-2 tbs butter

Sautee butter with onion and garlic until onion starts to turn clear.  Add in zucchini and Swiss chard and cover for a few minutes to let the Swiss chard wilt.  Add in black beans and cilantro and let them warm up.  Stir in the cooked quinoa.  Then, put the room-temperature tomatoes on top, add a couple splashes of hot sauce, salt and pepper to taste and serve!

Next time I make it, I'm going to try different veggies too!  I think it came out perfectly. :)  Pin It
