Baked Zucchini Patties are delicious!

I got home a few days ago and my garden had shot up in the extreme heat, which meant fresh zucchini!  I usually saute or chop it up and put it into pasta sauce or make ratatouille, but I wanted to try something different.  I googled around and found this recipe for zucchini fritters and decided to try that.  The problem is, I didn't bother to read the recipe as I started to use the food processor on the zucchini, so I made it my own way!


1 average zucchini, mushed in the food processor
1 tablespoon seasoning (I used basil Parmesan)
1 tablespoon garlic
1 cup breadcrumbs
1 egg
S&P 

Mix the mushed zucchini with the other stuff, use a spoon to take it out of the bowl and then flatten it.  Put cookie sheet in the 350 degree oven for like 20 minutes, then throw under the broiler for about 5.  The first time we used the broiler in this house was when my bestie was here for the wedding, so this was my first solo attempt.  That sucker is fast!  Mine got a little brown on the edges, but I liked the crunch.  I ate it with a side of pasta sauce and some more Parmesan.  My husband said "it isn't too bad, tastes like pasta"... I'll take it!
