Veggies for dinner! Oh, and chicken too.

I wanted something quick and healthy for dinner, so I made this chicken stir-fry-ish thing and as a side, I made chopped cabbage with apples.  So yummy!  I think I earned some ice cream.  LOL


Chop your small head of cabbage and two apples.  Put in a pan with the cover on and a pad of butter and let it cook down.  After it's cooked down a bit, add some salt and a few splashes of red wine vinegar and recover.  Then, lift the cover to let it brown.  Watch out for flying cabbage!

Chop your chicken (I used two half breast pieces) and veggies (I used red bell pepper, asparagus and broccoli) and put them in a bowl with some salad dressing (I had some fat free Italian that wasn't going on salads anytime soon!)... let it cook covered for 10 minutes until the chicken is done and veggies are tender enough to be eaten, but not smushy.

The best part is, the chicken was $1.88/lb and the red bell peppers 88¢ each at Hy-Vee!
